Had excess of basil so pronto pesto was the yummy option that popped for the lunch.
Ingredients:
Basil- 2 hands full
Coriander leaves- pinch
Garlic cloves- 3 or 4 ( depends on your taste, I like it more garlic-yy)
Grated parmesan- 2tbsp
Milk- 2 tsp ( just to hold everything together and make it into a smooth paste)
Salt + pepper
Blend everything together into smooth paste. I cut strips of zucchini and cut them again into spaghetti size and then put them in boiling water with salt and teeeny bit of olive oil. 5 minutes and ur pasta is done..
Drain the water properly add the pesto to it and a little chilli flakes for extra zing and viola u have a meal and to make it complete have some diced carrot,raddish,Gherkins etc..The whole thing is done well under 15 min.. Just what you need on a lazy sunday afternoon...
